Buckwheat Chocolate Pudding

When you crave something sweet and deeply chocolatey, but you also want it to be healthy,  this is a great dessert for you. Smooth, creamy and so rich in texture, this dessert can satisfy anyone's sweet tooth. And the main ingredient is buckwheat, how cool is that? This simple and nutritious seed makes such a delicious and tasty treat.



100 g buckwheat (soaked for minimum 4 hours)

3 dl almond milk

100 g dates (soaked for minimum 1 hour)

3-4 tablespoons date syrup

50 g roasted almonds, ground

4 tablespoons coconut oil

50 g dark chocolate

4 tablespoons cacao powder

Up to 10 tablespoons of almond milk


1.Once the buckwheat has been soaked, rinse it well, and let it drain thoroughly. Put it in a large pan or a medium pot with 3 dl almond milk. Bring to a boil. Reduce heat to low, cover and cook for approx. 15 minutes. Remove from heat and let it cool down completely.

2.Melt coconut oil and chocolate over low heat in a medium pot. Set aside.

3.Put cooked buckwheat in the blender. Drain dates and add them to the blender with all the other ingredients: almonds, melted chocolate, cacao powder, date syrup, 5 tablespoons almond milk. Blend until smooth and creamy. If the mixture is too thick add another 4-5 tablespoons of almond milk. Adjust sweetness if necessary.

4.Serve in a bowl and top with raspberries, blueberries, roasted almonds, chocolate...
